What are the tasks of a Commis de Cuisine?

  • Preparing the food: The commis de cuisine assists with the ‘mise en place’ (French for ‘preparation’) of the food. To do this, he prepares ingredients and cooking utensils for the head chef. He cuts vegetables, prepares meat and fish, prepares spices and oils and sets out the equipment.
  • Supporting the kitchen team: The young chef works closely with the chef de partie and supports him in preparing the dishes.
  • Safety and hygiene: The commis de cuisine is responsible for ensuring compliance with safety and hygiene regulations at his workplace. He also helps with the correct storage of products.
