Grilling is one of the oldest and most original ways of preparing food. Its origins go back to the discovery of fire around 700,000 years ago, when humans began to cook meat over open flames. In the course of history, different grilling techniques have developed in different cultures. The ancient Romans, for example, used grills to regulate the distance between the fire and the meat. Today, grilling is a popular method of food preparation. While private households often grill in the garden or on the balcony during the summer months, restaurateurs use the technique all year round. Not only classic charcoal or gas grills are used, but also alternatives such as electric or pellet grills.
What does ‘grilling’ mean?
The term ‘grilling’ is derived from the English word ‘grill’ and describes the grate over the fire on which various dishes are cooked. The selection of dishes is not limited to meat. Fish and seafood, as well as vegetables and meat substitutes, also end up on the grate.
Grilling food properly
There are as many different ways of preparing food for the grill as there are different types of grilling. There are several basic grilling methods:
- Direct grilling: The food is placed directly on the heat source. This method is particularly suitable for smaller pieces of meat or vegetables that cook quickly. The high temperature and direct fire ensure an aromatic crust and an intense barbecue flavour.
- Indirect grilling: By placing the food to be grilled next to the heat source, the hot air can circulate, ensuring that the food is cooked gently. This method is particularly suitable for delicate ingredients such as fish or large pieces of meat.
- Grilling with a wooden plank: First, a wooden plank is placed over the heat source. The food to be grilled is placed on this and cooked. This gives the food a special flavour.
