It takes more than just good spirits to open a bar

Just around the corner from the Byliny Restaurant in the Düsseldorf district of Unterbilk is a bar of the same name. How did that happen? At the beginning of March 2023, restaurateurs Michal Caasmann and Norman Metzing expanded their business and created a second location, the Byliny Bar.

Expanding with a new venture – this is what restaurateurs Michal Caasmann and Norman Metzing have done by opening the Byliny Bar in the Düsseldorf district of Unterbilk. Just two streets away, the pair have been successfully running their restaurant of the same name for seven years.

Good spirits alone aren’t enough

Even if the two owners of Byliny Düsseldorf are newcomers to the bar business, they know what it’s all about: ‘The fact is, no bar survives just because the drinks are good. The whole package has to work.’ Alongside international wines, they also offer their guests classic cocktails like the Espresso Martini and new trends like the Aperol Spritz. Owner Michal finds most of the ingredients he needs during his weekly shop in the Düsseldorf METRO store. In addition, METRO specialist supplier Rungis Express provides the restaurateurs with fresh produce like fish, meat and vegetables.

From handcart to plate

While wooden tables and beach chairs invite guests to linger outside the bar, huge rugs, wooden tables and benches with lambskins lend the interior a cosy, rustic ambience. In its range of dishes, Byliny Düsseldorf also relies on creativity – without even having a kitchen at the bar. Classic platters of meats and cheeses, vegetable crisps and smaller snacks are prepared by Norman at the restaurant, and Michal transports these to the bar by handcart in the afternoons. ‘We have a real advantage with the Byliny Restaurant because we can cook all kinds of dishes there,’ explains Michal. ‘There’s no limit on our creativity.’ On Wednesdays, the Byliny Burger is on the menu, and there are regular special offers like ‘Ribs and Drinks’ days with Norman’s homemade spare ribs. And for the future, the METRO customers are already cooking up new ideas to expand their culinary offerings.

Byliny Basil Lemonade is a refreshing summer drink that can be prepared in no time. Ingredients:

🍹 Basil syrup (4 cl)
🍹 Freshly squeezed lemon juice (4 cl)
🍹 Soda water (150 ml)
🍹 Ice cubes
🍹 Fresh basil for the garnish

Preparation:

Pour the basil syrup and the freshly squeezed lemon juice into a glass (0.3 l) of ice cubes and top up with soda. Garnish with fresh basil.
